Here is a simple granola recipe for brekkies and snacks, a staple for our family, that can be adjusted with all sorts of nuts, seeds or dried fruits. The current favourite though is with Valrhona chocolate...
- 3 cups of whole grain rolled oats,
- 1/2 cup of each of the following nuts: raw almonds, hazelnuts, flaked or desiccated coconuts (unsweetened),
- a handful of pecan nuts (optional),
- 1/2 cup of each of the following seeds: sunflower, sesame, ground flax seeds,
- 1/4 cup of chia seeds
Slightly heat 100g of honey together with 80ml of coconut oil, and pour on the oat mix. Stir and spread over a couple of oven trays and bake for around 15-20 minutes at about 150degC (time and heat can depend on ovens...). Add 120g of dark chocolate (70-80% eg Valrhona) in small chunks on the granola while it is still warm so the chocolate will melt. Let the granola cool down and keep in airtight containers. Enjoy with milk, almond milk, yogurt, berries, kiwi, dried fruits, whey, the list is endless. This granola has a very short shelf life in our kitchen, but only because it is consumed so quickly.
For 100g (including the pecans and a 70% cocoa!): 12g proteins, 34g carbs, 29g fats, 447cal. Add 1 scoop of strawberry whey and that's 17g of additional protein, 4g of carbs and 1g of fat.
